Basically 'Gib' is a classic videogame term for a chunk of a character, NPC, or mob that has comically blown into bits by either an explosion or something that would with realistic physic not do the aforementioned but does anyway for lack of a normal death animation or the rule of funny. In KAG it's about as described above.
